Why does eating a diet containing legumes reduce your risk of heart disease death by 82%?Sounds better than taking cholesterol medication every day.
They aren't hard to prepare. There are MANY kinds that come canned. You just heat and eat. And I don't think it means you have to eat them every day. Once or twice a week is probably fine.

Yes but most people don't know how to cook or prepare them, and/or are too busy to prepare them every day because of their work schedules.

Legumes are a powerhouse of nutrients for healthy living. But for heart health, it is even more important.
For one thing legumes contain plenty of proteins, fibers, carbohydrates, These soluble fibers help the body flush out fats. As an added benefit, the fiber in legumes are very hygroscopic- that is, they absorb many times their own weight in water. This is beneficial for some one who is trying to lose weight as this creates a filling sensation in the stomach, thereby preventing overeating.
And obesity is a major risk factor in heart disease.
Another advantage that legumes confer is that they are flavorful. As such, cooking requires less salt.
This cuts down on the consumption of salt and sugar, two risk factors for cardiovascular disease.
Cook with less salt. Better yet, use sea salt if you must use salt at all

A lot is said about legumes and heart health. It is true that legumes have heart protecting properties that is more valid in western diets. Why?

Researchers found that the copper in legumes may be particularly protective of the heart. Our western diet of fatty, processed foods, which is so closely associated with heart disease, is often low in copper. But people who frequently eat legumes have less hypertension, lower levels of total cholesterol and less diabetes (which can lead to heart disease), in spite of eating unhealthy saturated fats.

It is Fine that protiens, fibres etc help. But then there many common sources for that. At the heart of legume's heart- benifit is copper that is very much lacking in western diet.
